There was a single block of older vine Pinot Noir, planted to a well sunlit north facing slope, which had grown quite comfortable in their clay loam soils after twenty splendid vintages. Choice clones of Nebbiolo were grafted atop the responsive rootstock and a marvelous wine began to flow. A month of macerations, wild ferments and an extended term of sixteen months in a cooper's pick of well seasoned French oak puncheons. A big, beautiful bouquet of rose petals, savouryness and spice, Nebbiolo's renowned power and decorum over a booty of graceful, bitter chocolate tannins.

Barbera adapts brilliantly to the temperate slopes of Yarra Valley, this sun loving Mediterranean thrives in the cooler climes and yields wonderful harvests of perfectly ripened grapes, characterised by intensity of flavour, balance and finesse. Planted to a propitious northwest facing block of opportune clay loam soils, TarraWarra make Barbera in decidedly new world styling, designed to be delicious and fashioned for food. Rob Sticks Dolan's career in the wine industry began under the tutelage of Greg Clayfield and John Vickery at the enduring Rouge Homme. Originally established in the nineteenth century, essentially on the basis of its magnificent wine growing potential, St Hubert remains to this day one of the finest viticultural sites in Yarra Valley. Vines are all managed by hand and the fortuitous mesoclimes yield the finest fruit. St Huberts won much fame in Europe during the latter part of the 1800s, for the extraordinary quality of their new world wine. In the twentieth century, this noble estate lead the Yarra Valley's second golden age. The present day property boasts old vines planted in 1966 which generally yield low crops of intense fruit, brimming with rich flavours. A mere twenty one hectares of vine are crafted into one of Victoria's most enduring Cabernets. A tribute to the quality is the assertion by local growers that these vines produce the best Cabernet Sauvignon in Yarra Valley.

Hubert de Castella's passion for Yarra Valley saw him establish St Huberts in 1862. By the late 1800s it had grown to be the largest winemaking estate, the wines enjoyed immediate success in markets local and abroad. The onset of the Great Depression, the increasing popularity of fortified wine and the emerging profitability of dairy farming saw the vineyard revert to grazing in the 1920s. It wasn't until the 1960s that Yarra Valley again rose to prominence as a wine producing region and St Huberts was once again, one of the leading protagonists.

The fortuitous Pinot Noir vines of Soumah were established along Hexham Road, very near the auspicious Yarra Valley hamlet of Gruyere, just a short drive from the precious plantings of Yarra Yering and Coldstream Hills. A small team of dedicated professionals practise a regimen of holistic, environmentally sound agricultural techniques, for the realization of small yield wines which are evocative of the timeless old world classics. A silky, savoury effort, driven by drying cherry flavours, a twist of sassafras oak and toothy, licorice tannins.

The Abbey Vineyard at Tarrawarra, on the corner of Old Healesville Rd and Houghtons Lane, is a specialized, low yielding site which delivers a harvest of the most exquisite Pinot Noir. The choice clone MV6 was planted here in 1993 to highly mineral Humevale silt stones, which contribute to the generosity and balance within the fruit, ultimately the character of the final wine. Kangaroo Ground in the lower Yarra Valley has seen the establishment of a number of new vineyards due to some idyllic growing conditions. Enter Redbox, a fragrant Pinot Noir in vibrant new world styling, with a generous but elegant, food oriented, mouthfilling palate.

Planted to a property named Wildfell in 1851 by the original proprietor, Redbox estate's vines are gingerly husbanded to yield the most essential examples of Yarra Valley Cabernet Sauvignon. Nillumbik means shallow earth, so named by the original inhabitants to signify a lack of top soils lost to undulating terrains. Fruit is sourced from the eminent Witchmount Vineyard which claimed Best Shiraz of the World trophy at the Syrah Du Monde in 2008. Nillumbik Estate have planted their vines to harsh soils which greatly limit the yield of grapes, the quality of fruit however is quite amazing. The vinification techniques are ancient and very natural, handed down the generations by forebears from the old world. Volumes are kept small and the attention to detail is very high, all the work is done by hand. Pinot Noir grapes are hand picked and completely destemmed, mother nature then initiates fermentation through her wild indigenous yeasts. A bold style of cool climate Pinot Noir with an intense palate and earthy tannins.

Exceptional Langtons Classification. The low yielding, unirrigated vines at Mount Mary Vineyard are planted to grey sandy clay loams over broken shale soils. The percentage of each varietal included into Quintet every year is determined largely by the vagaries of vintage, factors such as fruit set and quality of harvest. An extravagantly rich cepage of Cabernet and Merlot, Malbec, Verdot and Cabernet Franc, Quintet exhibits an uncanny balance which drinks beautifully, a slight alcohol lift on finish will see it through for many years to come.

Established 1971, Mount Mary is a single vineyard estate, one of the first to be planted during the resurgence of interest in Yarra Valley wines. John and Marli Middleton became obsessed with the great French growths after visits to Burgundy and Bordeaux. They resolved to find a very special Yarra Valley site with a view to emulating the statuesque French styles. The topical cépage of Grenache and Mourverdre, Cinsault and Shiraz, matured sixteen months in an eclectic mix of good French oak, a slightly more fruit forward, earlier drinking style of Mt Mary.

A superb accord of elite parcels Cabernet Sauvignon from the oldest De Bortoli blocks in Yarra Valley. Fruit is sourced from two estate vineyards, suitably named Old Hill and Old Back, both established 1971.
